our history

Central Coast Food & Beverage began to take shape in 1978 in San Francisco, California. While the company now bases its primary operations in the Santa Cruz area, our client base extends all over the country, ranging from sophisticated multi-unit operations to smaller single unit ventures.

Founder and Industry expert, Tom Bruce has combined his own solid restaurant experience and extensive industry resources with a highly skilled support staff to bring you the very latest in cost controls, research & development, staff training tools, recipe costing and more!

Mr. Bruce has been serving the hospitality industry for over 30 years and is an accredited vocational instructor, currently teaching at American River College in Sacramento, California. He is certified by both the National & California Restaurant Associations and is a qualified HACCP & SERVSAFE instructor. In addition to periodic television appearances, Mr. Bruce has been published in Chef Magazine and is also a regular contributor to Restaurant Start Up & Growth Magazine.


Sidney Bruce, who joined the team in 1996 (and eventually married Tom) brings multi-industry experience in accounting, cost controls, financial analysis, general administration and project management.  Her extensive knowledge of computer systems & software allow Sidney to effectively create a variety of accounting & training tools specifically customized to your operation.
